Preparation

  • In a large mixing bowl, combine rolled oats, vanilla protein powder, dried blueberries, lemon zest, chia seeds, shredded coconut, and cinnamon (if using).
  • Pour in the almond butter and honey (or maple syrup). Mix until all ingredients are fully incorporated and the texture is sticky.
  • Scoop out a small amount of the mixture and roll it into bite-sized balls, about 1 inch in diameter.
  • Place the rolled bites on a plate or in a container and chill in the refrigerator for about 10 minutes to firm up.
  • Once chilled, transfer the protein bites to an airtight container for storage.

Notes

For extra flavor, add vanilla extract or a pinch of salt. Experiment with different nut butters and dried fruits. These bites can be stored in the refrigerator for up to a week or in the freezer for three months.
