Ingredients

Instructions

Preparation of Crust

  • Blend the Oreo crumbs in a food processor until fine.
  • Add the melted butter, salt, and red food coloring. Pulse until combined.
  • Spray a 9-inch springform pan with cooking spray and press the crust mixture into the bottom and up the sides.
  • Freeze the crust while continuing to the filling.

Preparation of Filling

  • Dissolve the Jell-O powder in 1 cup of boiling water and set aside to cool.
  • Whip the heavy cream, 1 cup of powdered sugar, and 1 teaspoon of vanilla extract until soft peaks form.
  • In a mixing bowl, beat the cream cheese, 1 cup of powdered sugar, and remaining vanilla extract until smooth.
  • Gently fold half of the whipped cream into the cream cheese mixture.
  • Mix the cooled Jell-O mixture with the remaining whipped cream and fold until incorporated.

Assembly and Chilling

  • Spread the cream cheese layer evenly over the crust.
  • Pour the blue Jell-O mixture over the cream cheese layer.
  • Refrigerate for at least 5 hours or overnight.

Topping

  • Beat the cream cheese and butter until fluffy, then add powdered sugar until smooth.
  • Pipe the frosting around the edges of the cheesecake.
  • Decorate with fresh blueberries and halved strawberries.
