  • 1 tablespoon olive oil
  • 1 pound chicken sausage, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Preparation

  • Heat the olive oil in a large skillet over medium heat.
  • Add the sliced chicken sausage to the skillet and cook for about 5-7 minutes, allowing them to brown nicely. Remove the sausage and set aside.
  • In the same skillet, add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onion becomes translucent.
  • Stir in the orzo pasta and let it cook for 2 minutes.
  • Pour in the chicken broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 10 minutes.
  • Stir in the heavy cream, chopped spinach, and the cooked sausage. Cook for another 2-3 minutes until the spinach wilts.
  • Remove from heat, stir in the grated Parmesan cheese, and season with salt and black pepper. Garnish with fresh parsley.

Notes

For variations, try turkey sausage or plant-based sausage. Add vegetables for extra nutrition and use different types of cheese as desired. Store leftovers in an airtight container for up to three days or freeze for up to a month.
