For the Glaze

Instructions

Prep the Dough

  • Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  • In a larger bowl, cream the softened butter and granulated sugar together until light and fluffy.
  • Beat in the ricotta cheese, egg, vanilla extract, orange zest, and orange juice until smooth.
  • Gradually mix in the dry ingredients until just combined, then fold in the dried cranberries and optional chopped apricots.

Chill the Dough

  • Cover the bowl with plastic wrap and refrigerate the dough for about 30 minutes.

Scoop and Bake

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Once the dough is chilled, drop heaping tablespoons of the dough onto the prepared baking sheet, leaving about 2 inches of space.
  • Bake in the preheated oven for 12–15 minutes, or until the edges are lightly golden.

Cool and Glaze

  • Allow the cookies to cool completely on the baking sheet.
  • Whisk together the glaze ingredients in a small bowl until smooth.
  • Drizzle or spread the glaze over the tops of the cooled cookies and let it set before serving.

Notes

Make sure your butter is softened but not melted; this helps achieve a fluffy texture. For vibrant flavor, use fresh orange juice instead of bottled juice.
