Instructions

Preparation

  • Heat the olive oil in a large pot over medium heat. Add the Italian sausage and cook it until browned, breaking it into small pieces as it cooks.
  • Once the sausage is browned, add the diced onion, chopped carrots, chopped celery, and minced garlic to the pot. Sauté for 5-7 minutes until the vegetables start to soften.
  • Stir in the diced tomatoes, drained cannellini beans, chicken broth, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat and let simmer for 20-25 minutes.
  • While the soup simmers, cook the pasta according to package instructions. Drain and set aside.
  • Stir the cooked pasta into the soup. Let it sit for a few minutes to absorb flavors. Serve hot, garnished with freshly chopped parsley.

Notes

Cook the pasta separately to prevent it from absorbing too much broth. Customize with other vegetables like spinach or zucchini. Store leftovers in an airtight container for up to 3 days; can also be frozen for up to 2 months.
