Preparation

  • In a high-speed blender or food processor, combine the frozen pineapple, coconut milk, sweetener (if using), vanilla extract, and a pinch of salt. Blend until smooth and creamy.
  • If the mixture is too thick, add a splash more of the milk until it holds a thick but firm shape.
  • For a firmer texture, place the mixture in the freezer for about 30 minutes before serving.

Assembly

  • Layer fresh pineapple chunks into a clear cup or bowl.
  • Using a spoon or piping bag, carefully spoon or pipe the pineapple ice cream over the fresh chunks in smooth, tall swirls.
  • Garnish with extra pineapple, a sprinkle of coconut flakes, or a drizzle of honey.

Notes

For more intense pineapple flavor, add a few tablespoons of fresh pineapple juice. For a creamier texture, whisk in a scoop of Greek yogurt. Serve in a hollowed-out pineapple or coconut shell for presentation.
