Instructions

Preparation

  • In a bowl, beat the heavy cream and powdered sugar until soft peaks form. Set aside.
  • In a separate bowl, combine mascarpone cheese, pistachio paste, and vanilla extract until smooth. Gently fold in the whipped cream until fully incorporated.

Assembly

  • Mix the cooled coffee with pistachio liqueur (if using).
  • Quickly dip the ladyfingers into the coffee and arrange a layer at the bottom of your serving dish.
  • Spread a thick layer of pistachio mascarpone cream on top.
  • Repeat with another layer of dipped ladyfingers and cream, finishing with cream on top.

Chilling

  • Refrigerate for at least 4 hours, or overnight, to allow flavors to develop.

Serving

  • Dust with cocoa powder and sprinkle chopped pistachios on top just before serving.
