Ingredients

For the crust

  • 2.5 cups all-purpose flour Forms the base of the crust.

  • 1 cup cold unsalted butter, cubed Essential for flaky texture.

For the apple filling

  • 5 large tart apples (like Granny Smith or Jonagold) The star of the dish!
  • 0.33 cups granulated sugar For the apple filling.
  • 1 tsp ground cinnamon Lends warmth and spice.
  • 1 tbsp lemon juice Brightens the flavors.
  • 1 tbsp cornstarch (optional) For added thickness.

Instructions

Make the Crust

  • Whisk together the flour, granulated sugar, baking powder, and salt in a large mixing bowl.
  • Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
  • Add the egg yolks, sour cream, and vanilla extract to form a dough. Work it gently until just combined.
  • Divide the dough in half, shape into discs, and wrap in plastic wrap before chilling for 30 minutes.

Prepare the Apple Filling

  • In a separate large bowl, toss the peeled and thinly sliced apples with sugar, cinnamon, lemon juice, and cornstarch (if using).
  • Allow the mixture to sit while you prepare the crust.

Assemble the Cake

  • Preheat your oven to 350°F (175°C) and line a 9x13-inch baking dish with parchment paper.
  • Once chilled, take one dough disc and press it evenly into the bottom of the prepared baking dish.
  • Spread the apple mixture over the crust.
  • Crumble the second dough disc over the top, pressing lightly to hold it in place.

Bake and Finish

  • Bake for 45–50 minutes, or until golden brown and bubbling.
  • Let it cool completely before dusting generously with powdered sugar.

Notes

For optimal flavor, use tart apples like Granny Smith or Jonagold. You can add spices like nutmeg or allspice for extra complexity. Serve warm or cold with whipped cream or ice cream.
