  • 2 tbsp honey or maple syrup Adds sweetness to balance the tartness of the raspberries.
  • 1 tsp vanilla extract Enhances all the other flavors.
  • 1 tbsp chia seeds Optional, for extra fiber.
  • 1-2 tbsp water To achieve the perfect dough-like texture, if needed.

Instructions

Preparation

  • In a spacious bowl, combine 1 cup of rolled oats, 1/2 cup of finely chopped almonds, and 1/2 cup of freeze-dried raspberries.
  • Add in 1/4 cup of shredded coconut and 1 tbsp of chia seeds if using.
  • Incorporate 1/4 cup of almond butter, 2 tbsp of honey or maple syrup, and 1 tsp of vanilla extract into the mixture.
  • Mix all ingredients together until they form a sticky dough, adding water as needed to achieve the right consistency.
  • Scoop out small portions and roll them into bite-sized balls.
  • Place the balls on a lined baking sheet and refrigerate for about 30 minutes to firm up.

Notes

For best results, use fresh ingredients and adjust consistency with more almond butter or water as needed. Store leftovers in an airtight container in the fridge for up to a week or freeze for longer storage.
