Instructions

Preparation

  • Add the rhubarb, ginger, sugar, and water to a small pot.
  • Stir the mixture gently to combine the ingredients evenly.
  • Place the pot on medium heat and bring it to a simmer, cooking for approximately 10 minutes or until the rhubarb is soft.
  • Once soft, remove from heat and strain through a fine mesh sieve to separate the syrup from the solids.
  • Allow the syrup to cool, then chill in the refrigerator for at least 30 minutes.

Serving

  • Fill a glass with ice and pour in a few tablespoons of the chilled rhubarb syrup.
  • Top with sparkling water or tonic, adjusting to taste.
  • Garnish with a fresh lime wedge and a sprig of mint.

Notes
