Instructions

Preparation

  • In a small pot, combine the chopped rhubarb, grated ginger, sugar, and water. Stir gently to mix.
  • Bring the mixture to a gentle simmer over medium heat, and allow to simmer for about 10 minutes until the rhubarb is tender and syrupy.
  • Strain the mixture through a fine mesh sieve into a bowl or jar and discard the solids. Chill the syrup in the refrigerator until cool.

Serving

  • Fill a glass with ice cubes and pour in 2-3 tablespoons of the chilled rhubarb syrup over the ice.
  • Top with sparkling water or tonic and stir to combine.
  • Garnish with a squeeze of fresh lime juice and mint leaves for presentation. Enjoy!
