Instructions

Roast the Beets

  • Preheat your oven to 400°F (200°C). Wrap each beet in foil and place on a baking sheet. Roast for 45–50 minutes until tender, then cool and peel. Slice into 1/2-inch rounds.

Prepare the Pears

  • Heat olive oil over medium heat in a large pan. Add sliced pears and drizzle with honey. Cook for about 2 minutes on each side until golden.

Assemble Your Towers

  • Layer a beet slice on a plate, add a sprinkle of blue cheese, then a pear slice. Repeat to create two or three layers, finishing with a beet slice on top and additional blue cheese.

Add the Finishing Touches

  • Sprinkle with toasted pecans and drizzle with balsamic glaze. Garnish with fresh thyme sprigs.
