Ingredients

For the Towers

  • 3 medium beets Roasted until tender
  • 1 large pear Thinly sliced
  • 1/2 cup blue cheese Creamy and crumbly
  • 1/4 cup pecans Toasted and chopped
  • 1 tbsp honey Adds sweetness
  • 1 tbsp balsamic glaze Enhances with tangy depth
  • 1 tbsp olive oil For sautéing
  • Fresh thyme For garnish

Instructions

Preparation

  • Preheat your oven to 400°F (200°C). Wrap the whole beets in aluminum foil and place them on a baking sheet.
  • Roast the beets for approximately 45–50 minutes until fork-tender. Let them cool, then peel and slice into 1/2-inch thick rounds.

Sautéing Pears

  • In a skillet, heat the olive oil over medium heat. Add the thinly sliced pear and drizzle with honey. Sauté for about 2 minutes per side until golden.

Assembly

  • On a plate, place one slice of roasted beet, followed by a layer of blue cheese, then a slice of caramelized pear. Repeat the layers to form a tower.
  • Finish with a sprinkle of blue cheese on the top.

Garnishing

  • Sprinkle the toasted pecans and fresh thyme over the towers, then drizzle with balsamic glaze.
  • Serve immediately.

Notes

For a lighter version, consider alternatives like low-fat feta instead of blue cheese, or add greens like spinach or arugula between layers.
