Ingredients

Cheese Mixture

Roasted Beets

  • 2 small roasted beets, peeled and finely diced Adds sweetness and vibrant color.

Optional Ingredients

  • 2 tablespoons chopped walnuts For a crunchy texture.

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wrap beets in foil, sealing them tightly.
  • Roast for 45–60 minutes until tender.
  • Cool roasted beets before handling.
  • Peel and finely dice the beets.

Mixing the Cheese

  • In a bowl, combine goat cheese, chives, dill, garlic powder, salt, pepper, and lemon juice until smooth.

Assembly

  • Lay a sheet of plastic wrap on the counter.
  • Spread the cheese mixture into a rectangle on the plastic wrap.
  • Sprinkle the diced beets, walnuts, and cranberries over the cheese mixture.
  • Roll the cheese and beets into a log, sealing the ends by twisting the plastic wrap.
  • Chill in the fridge for at least 1 hour.
  • Once chilled, unwrap and slice into rounds.

Notes

For more flavor, add a touch of honey or balsamic drizzle before serving. You can also experiment with herbs like thyme or tarragon.
