Instructions

Preparation

  • Preheat your oven to 400°F (200°C) to ensure the carrots roast perfectly.
  • In a large mixing bowl, toss the halved carrots with 1 tablespoon of olive oil, fresh thyme, and salt.

Roasting

  • Spread the carrots on a baking sheet in a single layer and roast them for about 20–30 minutes until tender and caramelized.

Making Whipped Ricotta

  • While the carrots are roasting, blend together ricotta, olive oil, lemon juice, lemon zest, and a pinch of salt until smooth and fluffy.

Plating

  • Once the carrots are roasted, spread the whipped ricotta generously in a serving dish.
  • Arrange the roasted carrots on top of the whipped ricotta artfully.
  • Drizzle hot honey over the dish to finish.
  • If using, sprinkle chopped pistachios on top before serving.
