Ingredients

For the Sweet Potato Steaks

Instructions

Preparation

  • Preheat your oven to 200°C (390°F).
  • Cut the sweet potatoes lengthwise into 1.5–2 cm thick ‘steaks’. No need to peel.
  • Brush both sides of the sweet potato steaks with olive oil and season generously with salt and pepper.

Roasting

  • Place the steaks on a parchment-lined tray and roast for 25–30 minutes, flipping halfway through.
  • Look for a golden color and fork-tender texture.

Making the Glaze

  • In a small bowl, whisk together gochujang, maple syrup, soy sauce, rice vinegar (or lime juice), sesame oil, and minced garlic until smooth and glossy.

Finishing Touches

  • Remove the sweet potatoes from the oven and brush generously with the glaze.
  • Return to the oven on the broil setting for 3–5 minutes, watching closely until the glaze bubbles and caramelizes.
  • Transfer to a serving plate and sprinkle with toasted sesame seeds and sliced scallions.
  • Squeeze fresh lime juice over just before serving.

Notes

Use sweet potatoes of similar size for even roasting. Monitor the glaze while broiling to prevent burning.
