Instructions

Preparation

  • Preheat the oven to 150°C (300°F).
  • In a bowl, mix the goat cheese and heavy cream until smooth.
  • Pour the mixture into ramekins.
  • Place the ramekins in a baking dish and fill the dish with water to create a water bath.

Baking

  • Bake for about 30-35 minutes until set.
  • Remove from the oven and let cool.

Serving

  • Once cooled, top each custard with a spoonful of fig chili jam.
  • If using black pepper caramel, caramelize sugar with black pepper and pour it over the jam.
  • Serve chilled or at room temperature.

Notes

For best results, ensure goat cheese is at room temperature before mixing. A water bath is essential for even baking. Let the custard cool completely before serving.
