Ingredients

For the Mochi Dough

Instructions

Prepare the Filling

  • In a mixing bowl, combine the goat cheese, cream cheese or Greek yogurt, chopped fresh sage, lemon zest, salt, and black pepper. Whip the mixture until it becomes light and airy, then chill the filling in the fridge for about 20 minutes.

Make the Mochi Dough

  • In another bowl, combine mashed sweet potato, glutinous rice flour, olive oil, and salt. Mix until it transforms into a soft, pliable dough, adding warm water gradually if too dry.

Shape the Mochi

  • Divide the dough into 8 equal pieces, flatten each in your palm, spoon the cheese filling into the center, pinch the edges to seal, and roll into a ball.

Steam the Mochi

  • Place the mochi balls on parchment squares inside a steamer basket. Steam over medium heat for 8 to 10 minutes until glossy and firm.

Rest and Serve

  • Let the mochi rest for 5 minutes before serving. Garnish with crispy fried sage leaves, a drizzle of olive oil or honey, and flaky salt.
