Instructions

Preparation

  • In a skillet over medium heat, sauté the onions, red bell peppers, and minced garlic in 1 tablespoon of olive oil until they’re soft and fragrant.
  • Set the sautéed vegetables aside to cool.

Burger Mixture

  • In a large bowl, mash the cooked lentils slightly using a fork or potato masher.
  • Stir in the cooled sautéed vegetables, chopped parsley, egg or flax egg, grated Parmesan or nutritional yeast, breadcrumbs, and selected spices.
  • Mix everything until fully combined.

Forming Patties

  • Divide the mixture into equal portions to yield about 4-6 patties.
  • Form each portion into burger patties about 1/2-inch thick.

Cooking

  • In the same skillet, heat the remaining olive oil over medium heat.
  • Carefully place the formed patties in the skillet and cook each side for about 4-5 minutes or until crispy and golden brown.

Serving

  • Serve the burgers on toasted whole grain buns, topped with sliced avocado, sautéed mushrooms, and fresh lettuce.
