Instructions

Preparation

  • In a large skillet over medium heat, introduce olive oil. Add the finely chopped onion and sauté for 3-4 minutes until softened.
  • Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and fully cooked, about 5-7 minutes.
  • Stir in the diced zucchini and rinsed chickpeas. Season with cumin, smoked paprika, salt, and black pepper. Mix well and cook for another 5-7 minutes until the zucchini softens.
  • Remove the skillet from heat, sprinkle with fresh parsley, and serve warm.

Notes

For added spice, consider including red pepper flakes. This dish is meal prep friendly and can also be frozen for up to three months.
