Instructions

Preparation

  • In a large pot, heat the olive oil over medium heat.
  • Add the ground beef to the pot, cooking until it’s browned. If needed, drain any excess grease.
  • Toss in the diced onion, chopped carrots, and celery. Cook for 5-7 minutes until the vegetables soften.
  • Pour in the beef broth, stirring in the Worcestershire sauce, dried thyme, salt, and black pepper. Bring to a boil.
  • Reduce heat and let the soup simmer for 20-25 minutes.
  • Stir in the frozen peas and cook for an additional 5 minutes.
  • Ladle the soup into bowls and top with a generous scoop of prepared mashed potatoes.
  • Sprinkle freshly chopped parsley over the top and serve hot.

Notes

Feel free to add other vegetables, like corn or green beans. This soup can be prepared ahead and stored in the fridge for up to three days or frozen for up to two months.
