  • 1 small onion, finely chopped Adds sweetness and depth.
  • 1 lb ground beef The hearty base of your casserole.
  • 1 can (15 oz) sloppy joe sauce The secret to that classic sloppy joe flavor.
  • Salt & pepper to taste Essential seasonings to elevate your dish.
  • 1.5 cups shredded cheddar cheese For that gooey, cheesy top layer.

For the biscuit topping

  • 2 cups biscuit mix The key to the fluffy biscuits.
  • 2/3 cup milk Assists in creating the perfect biscuit dough.
  • 2 tbsp melted butter Adds a beautiful glaze to the biscuit tops.
  • Optional: fresh chopped parsley for garnish For a pop of freshness and color.

Instructions

Preparation

  • Preheat your oven to 400°F (200°C). Lightly grease a 9x13-inch baking dish to prevent sticking.
  • In a large skillet over medium heat, add the olive oil. Sauté the finely chopped onion until soft and translucent.
  • Add the ground beef and cook until browned, breaking it apart with a spoon. Drain any excess grease from the skillet.
  • Stir in the can of sloppy joe sauce and allow it to simmer for 3-5 minutes. Season to taste with salt and pepper, adjusting to your preference.
  • Pour the sloppy joe mixture into the prepared baking dish and sprinkle the shredded cheddar cheese evenly over the top.

Biscuit Preparation

  • In a mixing bowl, combine the biscuit mix and milk, stirring until just combined. Be careful not to overmix.
  • Using a spoon, drop spoonfuls of the biscuit mixture evenly over the cheesy meat mixture.

Baking

  • Bake the casserole uncovered for 20-25 minutes or until the biscuit topping is golden brown and cooked through.
  • Once baked, remove from the oven, brush the tops with melted butter, and sprinkle fresh chopped parsley if desired.

Notes

For a healthier twist, consider swapping the ground beef for lean turkey or plant-based meat alternatives. You could also add more veggies like mushrooms or zucchini to the meat mixture for extra nutrition.
