Instructions

Preparation

  • Heat the olive oil in a skillet over medium-high heat and sear the brisket for 3-4 minutes on each side until browned. Remove the brisket and set it aside.
  • In the same skillet, add the sliced onions and minced garlic along with the salt, cooking for about 4 minutes until softened.

Cooking

  • In your slow cooker, combine balsamic vinegar, beef stock, thyme, rosemary, and black pepper. Stir well.
  • Place the seared brisket into the slow cooker and coat with the sauce.
  • Cover and cook on LOW for 9-10 hours or HIGH for about 4 hours until fork-tender.
  • Transfer the onions and sauce to a saucepan, stir in honey, and simmer over low heat for 8-10 minutes until thickened.
  • Slice the brisket against the grain, serve with gravy drizzled over it.
