Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Grease and line a 10×15-inch jelly roll pan with parchment paper.
  • In a small bowl, whisk together the flour, baking powder, ground cinnamon, nutmeg, cloves, and salt.
  • In a large bowl, beat the eggs and granulated sugar together until thick and pale, about 5-7 minutes. Stir in the vanilla extract.
  • Gradually fold in the dry ingredients and apple cider until just incorporated.
  • Pour the batter into the prepared pan and spread it evenly. Bake for 12-15 minutes, or until the cake springs back when lightly touched.
  • While the cake bakes, sprinkle a clean kitchen towel with powdered sugar.

Assembly

  • Once the cake is done, immediately invert it onto the prepared towel. Carefully peel off the parchment paper.
  • Roll the cake and towel together from the short end, creating a tight roll. Allow it to cool completely while rolled up.
  • In a mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
