Instructions

Preparation

  • Preheat oven to 175°C (350°F). Grease and line a loaf pan with parchment paper.
  • In a bowl, whisk together mashed sweet potato, brown sugar, vegetable oil, eggs, and vanilla extract until smooth.
  • In another bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  • Fold the dry ingredients into the wet ingredients until just combined.
  • Pour the batter into the prepared loaf pan and spread it out evenly.

Baking

  • Bake for 45 to 55 minutes or until a skewer inserted into the center comes out clean.
  • Let it cool completely in the pan.

Frosting

  • Beat the cream cheese and butter together until creamy.
  • Add powdered sugar, vanilla, and a pinch of salt, and mix until light and fluffy.
  • Spread frosting over the cooled loaf and sprinkle with chopped pistachios.

Notes

For healthier alternatives, substitute whole wheat flour for all-purpose flour and use maple syrup instead of sugar. Storing: Wrap leftovers tightly and refrigerate for up to a week; freezes well for up to three months.
