Ingredients

For Yum Yum Sauce

  • 1/3 cup olive oil mayo creamy base

  • 1/4 teaspoon cayenne pepper a hint of heat

Instructions

Preparation

  • Preheat the oven to 425°F (220°C).
  • On a large baking sheet, toss the chicken with 1 tablespoon tamari and 1 tablespoon orange juice. Season with black pepper and lightly toss with cornstarch or arrowroot powder. Drizzle with olive oil and bake for 15 minutes.

Making the Sauce

  • In a bowl, whisk together the remaining 1/3 cup tamari, 2 tablespoons orange juice, honey, chili paste, garlic, and ginger until well combined.

Glazing the Chicken

  • After the chicken has baked for 15 minutes, pour 2/3 of the sauce over the chicken and toss to coat. Return to the oven for another 5 minutes, until cooked through. For an irresistible finish, broil for 1-2 minutes to char the edges.
  • Drizzle with the remaining sauce before serving if desired.

Preparing the Yum Yum Sauce

  • In a small bowl, mix together olive oil mayo, ketchup, Worcestershire sauce, seasoned salt, and cayenne pepper. Adjust seasoning as needed to your taste.

Assembly

  • Place cooked rice in serving bowls. Top with sliced chicken, cucumber, avocado, kimchi, and fried wontons.
  • Drizzle generously with the Yum Yum sauce and enjoy!

Notes

For extra flavor, let the chicken marinate in the sauce ingredients for at least 30 minutes (or overnight) before baking. If you love spice, feel free to add more chili paste or even a diced jalapeño.
