Instructions

Preparation

  • Preheat your oven to 200°C (400°F).
  • Roll out your chilled puff pastry onto a sheet of parchment paper and score a border about 1 inch from the edge.
  • Toss the sliced peaches with cornstarch, brown sugar, vanilla extract, and lemon zest in a mixing bowl.

Assembly

  • Gently arrange the peach slices inside the inner border of the pastry, slightly overlapping.
  • Warm the honey gently with red chili flakes and a pinch of salt, then drizzle half over the arranged peaches.
  • Brush the edges of the galette with egg wash and sprinkle turbinado sugar along the edges.

Baking

  • Transfer the galette to the oven and bake for 25-30 minutes, or until golden and bubbling.
  • Once out of the oven, drizzle the remaining honey over the top and scatter the crushed pistachios.

Notes

Serve warm, ideally accompanied by vanilla ice cream or whipped cream. For a lighter version, try different fruit variations or nut substitutes.
