Ingredients

Phyllo Cups

Instructions

Preparation of Phyllo Cups

  • Preheat your oven to 375°F (190°C). Brush each sheet of phyllo dough with melted butter or olive oil. Layer the sheets four deep, cut them into 3-inch squares, and press each square into a mini muffin tin to form individual cups. Bake for 8-10 minutes, until golden brown and crisp. Remove from oven and cool completely.

Make the Avocado Filling

  • In a mixing bowl, mash the ripe avocados until smooth. Add fresh lime juice, minced garlic, chopped cilantro, salt, and pepper. Mix until creamy, adjusting seasoning as needed.

Cook the Shrimp

  • Toss peeled and deveined shrimp with smoked paprika, cayenne pepper, olive oil, and a sprinkle of salt and pepper. Heat a skillet over medium-high heat and cook the shrimp for 2-3 minutes on each side until they turn pink and have a slight char.

Assemble

  • Fill each phyllo cup with a dollop of the avocado mixture. Top with the spicy cooked shrimp, and garnish with fresh cilantro leaves and a wedge of lime.
