Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  • In a large mixing bowl, cream together softened butter and granulated sugar until light and fluffy. Gradually beat in eggs, then add vanilla extract and mashed bananas.
  • In another bowl, whisk together all-purpose flour, baking powder, and a hint of salt. Gradually mix into the banana mixture, alternating with milk.
  • Divide the batter evenly between the prepared pans and bake for 25-30 minutes until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to wire racks.

Filling Preparation

  • Combine chopped strawberries, granulated sugar, lemon juice, and cornstarch in a saucepan. Cook until thickened and then let cool.

Frosting
