Ingredients

Instructions

Preparation

  • Preheat your oven to 325°F (165°C) and grease a 9-inch springform pan.
  • In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of the prepared pan.

Making the Filling

  • In a large bowl, beat softened cream cheese with sugar until smooth. Add eggs one at a time, mixing well after each. Stir in vanilla extract and strawberry puree until combined.

Baking

  • Pour the cheesecake mixture over the crust in the springform pan. Bake for 55-60 minutes until the center is almost set. Allow cooling for 10 minutes before removing the pan sides.

Making the Ganache

  • Heat heavy cream in a small saucepan until simmering. Pour over dark chocolate chips and stir until smooth. Let cool slightly.

Assembling

  • Once the cheesecake is cooled, pour the chocolate ganache over the top.
  • In a separate bowl, mix sliced strawberries with sugar and lemon juice. Let sit for 10 minutes.
  • Arrange sweetened strawberries over the ganache layer.

Chilling

  • Refrigerate the cheesecake for at least 4 hours or overnight before serving.

Notes

This cheesecake can be made a day in advance for best flavors. Use high-quality dark chocolate for better taste.
