Ingredients

Instructions

Preparation

  • Preheat the oven to 325°F (160°C) and grease a 9-inch springform pan.
  • In a bowl, mix together the crushed shortbread cookies, sugar, and melted butter. Press this mixture firmly into the bottom of the prepared pan.

Making the Filling

  • In a large bowl, beat the softened cream cheese, sugar, and vanilla extract until silky smooth.
  • Gradually add the eggs, one at a time, mixing thoroughly after each addition.
  • Fold in the sour cream until fully incorporated.

Baking

  • Carefully pour the cheesecake filling over the prepared crust, using a spatula to smooth the top.
  • Bake in the preheated oven for about 50-60 minutes or until the center is just set and slightly wobbly.

Cooling and Topping

  • Remove the cheesecake from the oven and allow it to cool completely before transferring it to the refrigerator.
  • Chill for at least 4 hours, or preferably overnight.
  • In a saucepan, combine the sliced strawberries, sugar, cornstarch, and water. Cook over medium heat, stirring constantly, until thickened.
  • Allow the topping to cool before spreading it over the chilled cheesecake.
