Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Rub sweet potato halves with olive oil, seasoning with salt and black pepper. Arrange cut-side down on a baking sheet.
  • Roast sweet potatoes for 30-40 minutes until tender.

Chickpea Preparation

  • Heat olive oil in a pan over medium heat.
  • Add the chickpeas along with smoked paprika, garlic powder, cumin, chili flakes, salt, and pepper. Cook for 5-7 minutes, stirring occasionally until crispy.

Tahini Sauce Preparation

  • In a bowl, whisk together tahini, melted butter (or olive oil), lemon juice, maple syrup, minced garlic, salt, and warm water until smooth and creamy.

Assembly

  • Remove roasted sweet potatoes from the oven and mash the insides slightly with a fork.
  • Spoon crispy chickpeas over the sweet potato halves.
  • Drizzle with tahini butter sauce and top with fresh parsley and toasted breadcrumbs.
