Ingredients

For the Glaze

  • 2 tbsp gochujang A rich, red chili paste with a spicy kick.
  • 1 1/2 tbsp honey Adds sweetness and a luscious texture.
  • 1 tbsp soy sauce Imparts savory, umami richness.
  • Salt & Pepper To taste, essential seasonings.

For the Carrots

  • 4 medium carrots Tender and crunchy, vibrant orange.

For Serving

  • 2 cups yogurt Creamy and tangy, serves as a cooling contrast.

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Clean and slice the carrots into even pieces.
  • In a large mixing bowl, combine gochujang, honey, soy sauce, salt and pepper.
  • Toss the sliced carrots in the glaze until well coated.

Roasting

  • Spread the coated carrots evenly on a baking sheet lined with parchment paper.
  • Roast for 20-25 minutes or until tender and caramelized.

Serving

  • Scoop yogurt onto a serving plate to create a soft bed.
  • Top the roasted carrots atop the yogurt and serve immediately.

Notes

For best results, choose fresh, firm carrots, and do not overcrowd the baking sheet when roasting. Adjust the spice level of gochujang to your preference.
