Ingredients

Main Ingredients

  • 150 g feta cheese Becomes a dreamy, whipped cloud when blended.
  • 75 g Greek yogurt or sour cream Enhances the feta while adding creaminess.

Vinaigrette Ingredients

  • 3 tbsp extra virgin olive oil Elevates the vinaigrette.
  • 1 1/2 tbsp lemon juice Enhances the vinaigrette.
  • 2 tsp hot honey (or honey + chili flakes) Adds balance of sweetness and spice.
  • 1 tsp Dijon mustard Adds a nuanced kick.
  • 1 pinch salt Essential to awaken flavors.
  • 1 optional crushed chili flakes For an extra hit of heat.

Garnish

  • 1 none lemon zest or microgreens for garnish A final touch of freshness.

Instructions

Cooking the Orzo

  • Boil salted water in a pot. Once boiling, add the orzo. Cook according to package instructions until al dente (about 8-10 minutes). Drain and rinse with cool water.

Making the Whipped Feta

  • In a food processor, combine feta, Greek yogurt, lemon juice, and olive oil. Blend until smooth and airy, then chill in the refrigerator.

Preparing the Salad

  • In a large bowl, combine cooked orzo, chickpeas, cucumber, red onion, parsley, and mint.

Whisking the Vinaigrette

  • Combine extra virgin olive oil, lemon juice, hot honey, Dijon mustard, and salt in a jar. Shake until blended and adjust seasoning to taste.

Tossing the Salad

  • Pour vinaigrette over the salad mixture and gently toss to coat.

Assembling the Dish

  • Spread the chilled whipped feta on a serving plate. Spoon the orzo salad on top.
