Preparation

  • Begin by cooking the pasta in a pot of salted boiling water until it reaches al dente perfection.
  • Once cooked, drain the pasta and set it aside, allowing it to rest while you prepare the other ingredients.

Cooking

  • In a large pan, heat a little butter or olive oil over medium heat. Sauté the sliced leek and mushrooms until they are soft and golden, about 5-7 minutes.
  • Add the cooked chicken strips to the pan, gently heating through until warmed completely.
  • Pour in the heavy cream and stir well. Allow the mixture to simmer for 3-4 minutes until the sauce thickens slightly.
  • Toss the drained pasta into the pan, ensuring everything is evenly coated in the creamy sauce. Season with salt and pepper to taste.
  • Transfer the entire mixture into a baking dish. If you desire, sprinkle extra cheese on top for an added cheesy crust.
  • Bake in a preheated oven at 375°F (190°C) for 15-20 minutes, or until the casserole is golden and bubbly.
