Instructions

Preparation

  • Preheat your oven to 175°C (350°F). Grease and line a 20 cm round cake pan with parchment paper for easy release.
  • In a large bowl, rub the lemon zest into the granulated sugar using your fingertips until fragrant and moist.
  • Add the olive oil and eggs to the sugar mixture, whisking until smooth and pale, then incorporate milk and lemon juice.
  • In a separate bowl, whisk together all-purpose flour, baking powder, baking soda, and salt; gently fold into wet ingredients.

Baking

  • Pour the batter into the prepared pan and smooth the top. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the cake to cool completely in the pan before frosting.

Frosting

  • In a bowl, whip ricotta, pistachio paste, powdered sugar, and a pinch of salt until smooth, then gradually drizzle in cream.
