Ingredients

Cheese Mixture

  • 200 g cream cheese (softened) for a rich and creamy base

Tomato Mixture

  • 250 g cherry tomatoes whole or halved, juicy and sweet
  • 1 tbsp olive oil for roasting and added richness
  • 1 tsp balsamic vinegar adds a tangy depth
  • Pinch salt to enhance the sweetness of tomatoes
  • Handful fresh basil thinly sliced, for a fresh finish

For Serving

  • to taste toasted baguette slices or crostini for serving

Instructions

Preparation

  • Preheat your oven to 200°C (390°F).
  • In a mixing bowl, toss the cherry tomatoes with olive oil, balsamic vinegar, and a pinch of salt. Spread them out on a lined baking tray.
  • Roast the tomatoes in the oven for 15-20 minutes or until they are soft and blistered, releasing their sweet juices. Set them aside once done.

Prepare Cheese Mixture

  • In a separate bowl, combine cream cheese, ricotta cheese, mozzarella, Parmesan, minced garlic, dried oregano, and seasoning with salt and pepper.
  • Use a spatula or fork to mix until the mixture is smooth and well combined.

Assemble and Bake

  • Spread the creamy cheese mixture evenly into a small oven-safe dish.
  • Carefully spoon the roasted tomatoes over the top, ensuring they are evenly distributed.
  • Bake at 190°C (375°F) for about 20 minutes, or until the dip is bubbling and the edges are golden brown.

Garnish and Serve

  • Once out of the oven, top the dip with fresh basil ribbons and drizzle with a little extra olive oil.
  • Serve hot alongside toasted baguette slices or crostini.

Notes

To elevate your dip, consider customizing the cheeses, adding spice with red pepper flakes, or using fresh herbs instead of dried.
