Instructions

Preparation

  • Heat 3/4 cup of olive oil in a small pan over medium heat.
  • Toss in the thyme sprigs and let them sizzle until the sound of frying softens.
  • Stir in the chopped almonds and cook for 2–3 minutes until they turn lightly golden.
  • Mix in the garlic slices and Aleppo pepper. Cook for an additional minute, avoiding burning the garlic.
  • Remove from heat and pour in the remaining 1/4 cup of olive oil.
  • Add the crumbled feta and parsley, and mash gently with a fork to blend ingredients.
  • Spoon into a bowl and enjoy with fresh bread.

Notes

For enhanced flavor, use high-quality extra-virgin olive oil. Consider adding herbs like basil or oregano, or substituting almonds with walnuts or pecans for variations.
