  • 500 g fresh spinach (or 400 g frozen, thawed and drained) The star of our dish, fresh spinach is lush and earthy.

  • 2 spring onions, chopped Contributes a fresh crunch to the filling.
  • 2 cloves garlic, minced Infuses the dish with warmth.
  • 200 g feta cheese, crumbled Offers a distinctive creamy and tangy flavor.
  • 100 g ricotta or cottage cheese Adds richness and balances the feta's brininess.
  • 2 eggs Binding the ingredients together.
  • 1 tbsp fresh dill, chopped Enhances the herbaceous profile of the dish.
  • 1 tbsp parsley, chopped Lends a lovely green note.
  • Salt & pepper to taste Essential for enhancing the natural flavors.
  • 10–12 sheets phyllo dough, thawed Delivers the signature flaky texture.
  • 100 g melted unsalted butter or olive oil (for brushing) Ensures the phyllo dough turns golden brown.

Instructions

Preparation

  • In a large pan, heat the olive oil over medium heat. Add the finely chopped onion and spring onions, sautéing until softened.
  • Stir in the minced garlic and allow it to become fragrant.
  • Add the fresh spinach, tossing with the onions until it wilts. Cook until moisture evaporates, then remove from heat and cool slightly.
  • In a large mixing bowl, combine the cooled spinach mixture with feta, ricotta, eggs, dill, parsley, salt, and pepper. Mix until integrated.
  • Preheat oven to 180°C (350°F) and prepare a baking dish by brushing it with melted butter.
  • Layer 5–6 sheets of phyllo dough in the dish, brushing each with butter.

Assembly

  • Spread the spinach and cheese mixture evenly over the phyllo base.
  • Fold the overhanging phyllo sheets over the mixture, then cover with remaining phyllo, brushing each layer with melted butter.
  • Lightly score the top into portions with a knife and bake for 40–45 minutes, or until golden brown.

Serving

  • Let the pie rest for 10–15 minutes before slicing and serving.

Notes

For best results, drain spinach well to avoid sogginess. Layer phyllo diligently and taste the filling before finalizing its flavor.
