Preparation

  • Preheat your oven to 350°F (175°C) for toasting the nuts.
  • Toast the almonds and pistachios (or mixed nuts) on a baking sheet for about 8–10 minutes until golden and fragrant.
  • In a medium saucepan, heat the honey over medium heat until it reaches 250°F (120°C).
  • Combine sugar and water in another pan, heating until it reaches 300°F (150°C) to create a smooth syrup.
  • Whisk the egg whites in a mixing bowl until they form soft peaks.
  • Gradually pour in the hot honey while beating the egg whites, then slowly add the sugar syrup, continuing to beat until thick and glossy.
  • Gently fold in the toasted nuts and vanilla extract or citrus zest.
  • Pour the mixture into a parchment-lined dish and spread it evenly, pressing down gently.
  • Allow it to set at room temperature for about 4 hours or until firm, then slice into bite-sized pieces.

Notes

Store nougat in an airtight container, in a cool, dry place. It can be frozen for up to three months. Consider adding spices or coating it in chocolate for variations.
