Instructions

Preparation

  • Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
  • In a mixing bowl, combine the chocolate cookie crumbs and melted butter. Press into the bottom of the prepared pan.
  • In a large mixing bowl, beat the softened cream cheese, sugar, and vanilla until smooth.
  • Add the eggs one at a time, mixing well after each addition.
  • Divide the batter into three portions. Stir melted semi-sweet chocolate into one, milk chocolate chips into the second, and white chocolate chips into the third.
  • Pour the semi-sweet chocolate batter over the crust, then layer with milk chocolate, and finish with white chocolate batter.

Baking

  • Bake in the preheated oven for 50 to 60 minutes, or until the center is almost set.
  • Cool the cheesecake in the oven with the door slightly open for about an hour.

Chilling

  • Refrigerate the cheesecake for at least 4 hours, preferably overnight before serving.

Notes

For optimal results, ensure cream cheese is at room temperature. Use store-bought crust for convenience. Add a pinch of sea salt for enhanced flavors. Garnish with whipped cream or chocolate sauce if desired.
