Preparation

  • In a medium saucepan, combine the mashed bananas, crushed pineapple with its juice, and lemon juice. Stir well to ensure everything is evenly blended.
  • Add the vanilla extract, ground cinnamon, salt, and sugar into the mixture. Stir to combine all the flavors perfectly.

Cooking

  • Place the saucepan over medium heat and bring the mixture to a gentle boil. Stir frequently to prevent sticking.
  • Continue to cook, stirring regularly, until the jam thickens and darkens slightly, about 20-25 minutes.
  • Stir in the rum and allow the mixture to simmer for another 5 minutes.

Finishing

  • Remove the saucepan from heat and let the jam cool slightly. Carefully pour the jam into sterilized jars, seal them, and refrigerate.

Notes

For perfect consistency, use ripe bananas. You can experiment with different fruits like mango or papaya. Make sure jars are sterilized.
