Ingredients

For the Chicken Skewers

  • 1 tablespoon lemon zest
  • 1–3 tablespoons harissa sauce Adjust for desired spice level
  • 1 teaspoon chipotle chili powder
  • 1/4 cup extra virgin olive oil
  • Salt and black pepper, to taste
  • 4 cloves garlic, chopped
  • 1 1/2 pounds chicken breast, cut into chunks
  • 1 teaspoon honey
  • 1 shallot, chopped
  • 2 teaspoons dried oregano

For the Crispy Herb Feta Fries

  • 2 tablespoons olive oil
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1 clove garlic, grated
  • 1 teaspoon lemon zest
  • 4 russet potatoes cut into 1⁄4-inch matchsticks
  • 1/2 cup mixed herbs (like parsley, dill, mint)
  • 2 tablespoons toasted sesame seeds
  • 1/2 cup crumbled feta cheese
  • Salt, to taste
  • 1–2 cups tzatziki sauce For serving
  • 1/2 cup garlic tahini For serving

Instructions

Make the Chicken Skewers

  • In a medium bowl, combine the olive oil, shallot, chopped garlic, dried oregano, chipotle chili powder, honey, harissa sauce, lemon zest, and a pinch of salt and pepper.
  • Add the chicken chunks to the bowl and toss well to coat them in the marinade. Let marinate for 10 minutes for optimal flavor.
  • Preheat your oven to 450°F (230°C). While it’s heating, thread the marinated chicken onto skewers.
  • Place the skewers on a baking sheet and bake for 20–25 minutes until cooked through and slightly charred.

Prepare the Crispy Herb Feta Fries

  • In a bowl, toss the cut potatoes with olive oil, garlic powder, cayenne pepper, and salt until well coated.
  • Spread the potatoes evenly on a sheet pan, ensuring they aren’t overcrowded.
  • Bake the fries for about 15–20 minutes, then flip and bake for an additional 15 minutes until golden brown and crispy.
  • In a separate bowl, mix the chopped herbs, lemon zest, grated garlic, sesame seeds, and crumbled feta.
  • Once the fries are done, sprinkle the herb-feta mixture over them and toss gently.

To Serve

  • Place the chicken skewers on a plate alongside the crispy herb-feta fries. Serve with tzatziki sauce and garlic tahini on the side.

Notes

Use fresh lemon juice along with the zest for a brighter flavor. If desired, add more harissa for extra heat. Soak skewers in water for 30 minutes before grilling to prevent burning.
