  • 2 tablespoons unsalted butter velvety and rich, it forms the base.
  • 2 tablespoons all-purpose flour lending a delightful thickness to the sauce.

Liquid Ingredients

  • 1 cup whole milk creamy and smooth, contributing to a perfect consistency.

Cheese Ingredients

  • 1 cup shredded cheddar cheese (or a mix of cheddar & Monterey Jack) sharp, tangy, and gooey.

Flavorings

  • 1/2 teaspoon garlic powder fragrant and aromatic.
  • 1/2 teaspoon smoked paprika infusing a hint of smokiness.
  • 1/2 teaspoon salt adjust to taste.
  • 1/4 teaspoon cayenne pepper optional for a spicy kick.
  • 1 teaspoon hot sauce optional for extra depth.

Instructions

Preparation

  • In a medium saucepan, melt the unsalted butter over medium heat until it begins to bubble gently.
  • Add the flour to the pan and whisk vigorously for 1–2 minutes until it transforms into a golden roux.
  • Slowly pour in the whole milk, continuing to whisk to avoid lumps. Cook for 2–3 minutes until it thickens slightly.

Cooking

  • Lower the heat and gradually stir in the shredded cheese, watching it melt into the mixture.
  • Mix in the garlic powder, smoked paprika, salt, cayenne (if using), and hot sauce, stirring until fully combined.
  • Drizzle the cheese sauce generously over hot, crispy fries or serve it as a dip on the side.

Notes

For the best meltability, use fresh cheese instead of pre-shredded. Stir continuously while adding milk to prevent lumps. If making in advance, store in the refrigerator and reheat gently with a splash of milk.
