Preparation

  • Mix butter with minced garlic if desired, and generously spread this mixture on one side of each bread slice.
  • Heat a small pan over medium heat. Add the diced bell peppers along with a pinch of salt and pepper. Sauté for about 2 minutes, just until they are slightly softened but still crisp.

Assembly and Grilling

  • Place two slices of bread (buttered side down) on a cutting board. Layer half of the shredded cheese on top, followed by the sautéed bell peppers and fresh parsley. Sprinkle the remaining cheese over the veggies, then close with the other slice of bread (buttered side up).
