Instructions

Preparation

  • Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
  • In a mixing bowl, combine Oreo crumbs with melted butter. Transfer mixture to the springform pan and press down firmly. Bake for 10 minutes and then let cool.
  • Beat the softened cream cheese in a large bowl until smooth. Gradually add sugar, then sour cream and vanilla, mixing well. Add eggs one at a time, mixing after each addition.
  • Divide the mixture into three parts. Mix semi-sweet chocolate into one part, white chocolate into another, and milk chocolate into the last.
  • Pour each layer over the cooled crust in order: semi-sweet chocolate, white chocolate, and milk chocolate. Swirl with a knife for a marbled effect.

Baking

  • Bake the cheesecake for 60-70 minutes. The edges should be slightly browned; the center should be just set. Turn off the oven and let the cheesecake cool inside with the door ajar for about an hour.

Fudge Layer

  • Heat heavy cream in a saucepan until simmering. Remove from heat and add dark chocolate chips, unsalted butter, and vanilla extract. Stir until smooth.
  • Pour fudge over the cooled cheesecake evenly and refrigerate for at least 4 hours or overnight before serving.

Decoration and Serving

  • Before serving, decorate with chocolate shavings, mini chocolate chips, and fudge pieces.
