Ingredients

For the crust

Instructions

Preparation

  • Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  • In a bowl, combine graham cracker crumbs and melted unsalted butter. Mix until the crumbs are evenly coated and press firmly into the bottom of the prepared pan.
  • Bake for 10 minutes, then let it cool completely.

Making the cheesecake

  • In a large bowl, beat softened cream cheese until smooth. Gradually add granulated sugar and mix well.
  • Add sour cream and vanilla extract, then beat in eggs one at a time.
  • Gently fold in rainbow marshmallows until evenly distributed.
  • Divide the batter into two bowls, adding purple food coloring to one and blue to the other.
  • Alternately spoon dollops of purple and blue batter into the crust, swirling gently with a knife.
  • In a small bowl, mix marshmallow fluff with a bit of purple and blue food coloring, then drop spoonfuls on top of the cheesecake batter and swirl.
  • Bake for 60-70 minutes, until the center is set. Turn off oven and leave the cheesecake inside with the door ajar for 1 hour.
  • Cool in the refrigerator for at least 4 hours or overnight before removing from the pan.

Decoration

  • Decorate the top with whipped cream, rainbow sprinkles, and mini marshmallows before serving.

Notes

Allow cheesecake to cool gradually to prevent cracks. Best if made a day in advance.
