Ingredients

For the Tarts

  • 2-3 pieces shallots, thinly sliced The sweet, almost caramel notes of these delicate bulbs will become a beautifully sweet base for our tarts.
  • 1 tsp butter For that rich, creamy backdrop, enhancing the overall flavor profile.
  • 1/2 tsp brown sugar A touch of sweetness to support the natural sugars in the shallots as they caramelize.
  • 1/2 tsp balsamic vinegar Adding a tangy depth that balances the sweetness and enhances the savory elements perfectly.
  • 2 tbsp crumbled feta cheese Creamy, tangy, and slightly salty, this cheese offers a burst of flavor with every bite.
  • 1 sheet puff pastry (thawed and cut into 4 squares) This light, flaky pastry is the star that encapsulates all the delightful flavors.
  • 1 piece egg (for egg wash) To achieve that golden-brown, shiny finish that makes each tart visually irresistible.
  • to taste Salt & pepper A finishing touch to bring all the flavors together harmoniously.
  • as needed Fresh thyme or rosemary (optional) Aromatic herbs that add a hint of earthiness and vibrancy to the dish.
  • as needed Olive oil, for brushing To enhance flavor and promote that classic golden hue.

Instructions

Preparation

  • In a spacious skillet, melt the butter over medium heat. Add the sliced shallots, brown sugar, balsamic vinegar, salt, and pepper. Stir gently, allowing the mixture to cook until the shallots transform into a golden, silky treasure, about 10 minutes.
  • Preheat your oven to 200°C (390°F) and line a baking tray with parchment paper.

Assembly

  • Spoon a small pile of the caramelized shallots onto the tray for each tart, ensuring an even distribution.
  • Sprinkle the crumbled feta generously over these piles.
  • Place a square of puff pastry over each pile of goodness and tuck the edges gently around the shallots and feta, then brush the tops with the egg wash.

Baking

  • Slide the tray into the preheated oven and bake for 18-22 minutes until the tarts puff up beautifully and reach a deep golden brown.
  • Use a spatula to gently flip each tart onto a serving plate and garnish with fresh thyme or a drizzle of olive oil.

Notes

Keep an eye on the shallots to avoid burning. Don't rush the baking time—let those tarts puff up beautifully for the best flavor and texture.
