Instructions

Preparation

  • In a large bowl, combine the flour, instant yeast, and salt before slowly adding warm water. Stir until a sticky dough forms.
  • Knead briefly to bring the dough together, cover with a towel and let rise in a warm spot until doubled in size, approximately one hour.

Shaping the focaccia

  • Gently transfer the risen dough to a greased baking pan, stretch to fit, and dimple the surface.
  • Drizzle olive oil on top and allow it to rise a second time for 30–45 minutes.

Baking

  • Preheat the oven to 425°F (220°C) and bake the focaccia for 25–30 minutes until golden and puffed.
  • Let it cool slightly before handling.

Preparing the whipped feta

  • Blend feta cheese, Greek yogurt, olive oil, grated garlic, and lemon zest in a food processor until smooth and spreadable.
  • Season with salt and pepper to taste.

Assembling

  • Slice the cooled focaccia and create pockets.
  • Spread a generous amount of whipped feta inside each piece.
  • Top with halved cherry tomatoes, herb sprigs, edible flowers, and optional toppings.
  • Sprinkle flaky salt and drizzle olive oil on top before serving.

Notes

For best results, allow dough to rise adequately, use enough olive oil for greasing, and allow the whipped feta to reach a silky texture.
