Instructions

Preparation

  • Preheat your oven to 200°C (400°F) and line a large baking tray with parchment paper.
  • Combine the feta, cream cheese (or Greek yogurt), and olive oil in a blender or mixing bowl, blending until smooth.
  • Stir in the sun-dried tomatoes and your choice of herbs.

Assembling

  • Roll out both sheets of puff pastry into equal circles.
  • Place one circle on the prepared baking tray and spread the whipped feta mixture evenly across it, leaving a 1.5 cm border.
  • Place the second circle on top, tucking it in gently.
  • With a small glass or cup placed in the center, cut 16 equal strips extending from the center to the edge.
  • Twist each strip gently to form elegant petals.

Baking

  • Brush the pastry with an egg wash and sprinkle sesame or nigella seeds on top.
  • Bake for 20-25 minutes until golden brown.

Making Hot Honey

  • Combine honey and chili flakes or hot sauce in a saucepan over low heat until warmed.
